An Italian Pasta with 120 cuts of pasta and egg noodles.
Quality is maintained by selecting the best durum wheat semolina and using the traditional production processes; a long mixing time to allow the flour to fully absorb the water, and a drying process performed at a low temperature (max 60°C) and for a long time (for pasta like spaghetti, it can be as long as 30 hours). This process ensures that the flour’’s properties are not altered, obtains a natural development of gluten and to keeps the typical wheat flavour intact.
